Ingredients

Fenugreek leaves / kasuri methi ⅛ teaspoon
Ghee 3 tablespoon
Oil 2 tablespoon
Parboiled rice ½ cup
Poha 1 tablespoon
Rice 2 tablespoon
Salt ¼-½ teaspoon as per taste
Urad dal 2 tablespoon

Recipe

Preparation

  1. 1. Soak urad dal, parboiled rice, poha and rice separately in water. Keep them soaked for about 4 hours.

  2. 2. Make the sambhar and coconut chutney using their own recipe.

Cooking

For Dosa Batter

  1. 1. In a mixer grinder, add the normal rice, parboiled rice, urad dal, fenugreek seeds, poha and some water (a little less amount than parboiled rice).

  2. 2. Turn on the mixer grinder and grind the contents till you get smooth batter.

  3. 3. Add small quantity of water if needed and check that your batter is not thick. Add some salt to the mixture and mix the contents well.

  4. 4. Transfer the contents in a big vessel. Cover the vessel and complete the fermentation of the mixture. (The time taken for fermentation is roughly 8-10 hours depending on the climatic conditions of your city)

  5. 5. Once you see small bubbles on the layer of the batter, your batter is prepared.

For Making Dosa

  1. 1. In a pan, add some water to clean the pan.

  2. 2. Add some oil to the pan and spread a portion of dosa batter in spiral form using the spoon or small bowl. (Do this in one direction either clockwise or anticlockwise)

  3. 3. When you have sufficient batter on the pan, apply some ghee on one side of the dosa.

  4. 4. Now, add some ghee to the pan and turn the dosa to the other side and cook.

  5. 5. Apply some ghee on the other side of the dosa and cook the dosa till your get golden brown colour on both sides of the dosa.

  6. 6. Lift the dosa carefully from the pan onto the plate. Make all the dosas in the same way.

  7. 7. Your dish is prepared and ready to be served. Serve with sambhar or coconut chutney.

*You can use rava in place of rice for making rava dosas.
