Ingredients

Chana dal 2 tablespoon
Cumin seeds / jeera A pinch
Fennel seeds / saunf beej ½ teaspoon
Ghee 2 tablespoon
Oil 1½ teaspoon
Onions ½ small
Poha 50 grams
Red Chilli (Powdered) 1½ teaspoon
Rice 200 grams
Roasted chana dal 50 grams
Salt ½ teaspoon or as per taste
Semolina / sooji 1½ teaspoon
Sugar ½ tablespoon
Tuvar / arahar dal 1½ teaspoon
Urad dal 50 grams

Recipe

Preparation

  1. 1. In a deep bowl or vessel, add the rice and fenugreek seeds. Wash the contents and soak them in water (till the contents are completely soaked) for about 6 hours.

  2. 2. In another deep bowl or vessel, add urad dal, little less than half of the chana dal and tuvar dal. Wash the contents and soak them in water (till the contents are completely soaked) for about 6 hours.

  3. 3. To another deep bowl or vessel, add poha. Wash the contents and soak them in water (till the contents are completely soaked) for about 6 hours.

  4. 4. Roughly chop the onions and keep them aside.

  5. 5. In a mixer grinder, add the roasted chana dal, some salt and one-third of the cumin seeds.

  6. 6. Grind the contents till you get a smooth chana dal powder. Keep the mixture aside.

  7. 7. Make the sambhar and coconut chutney using their own recipe.

Cooking

For Dosa Batter

  1. 1. In a mixer grinder, add rice, dal and poha. Turn on the mixer grinder and grind the contents till you get a smooth batter.

  2. 2. Transfer the contents in a big vessel. Cover the vessel and complete the fermentation of the mixture. (The time taken for fermentation is roughly 8 hours)

  3. 3. Once you see small bubbles on the layer of the batter, your batter is prepared.

  4. 4. Stir the contents. Add semolina, sugar and very small amount of salt to the mixture. Mix the contents till you get a batter with thick flowing consistency.

For Masala

  1. 1. In a mixer grinder, add the remaining cumin seeds, onions, red chilli powder and some salt.

  2. 2. Grind the contents till you get a smooth paste.

For Making Dosa

  1. 1. Heat a non-stick pan, add some water to clean the pan.

  2. 2. Add some oil to the pan and spread a portion of dosa batter in spiral form using the spoon or small bowl. (Do this in one direction either clockwise or anticlockwise)

  3. 3. When you have sufficient batter on the pan, sprinkle some oil on its sides.

  4. 4. When the dosa is half cooked, apply the masala on the dosa and sprinkle chana dal powder on the dosa.

  5. 5.  Fold the dosa. Apply ghee on it and cook it till the dosa is completely cooked.

  6. 6. Make all the dosas same way.

  7. 7. Your dish is prepared and ready to be served. Serve with sambhar or coconut chutney as per your choice.

*You can use rava in place of rice for making rava dosas.
