Ingredients

Baking soda A pinch
Cardamom powder ⅕ teaspoon
Cashew nuts 4 pieces
Coconut 2 tablespoon
Flour (maida) 3⅓ tablespoon
Khoa 100 gram
Milk ⅖ cup
Oil 2 tablespoon
Rice flour ¾ tablespoon
Semolina / sooji 1½ tablespoon
Sugar 3½ tablespoon

Preparation

  1. 1. Grate the coconut. Keep it aside.

  2. 2. Chop the cashew nuts and keep them aside.

  3. 3. In a deep bowl or vessel, add flour, semolina, rice flour, baking soda, a small amount of sugar and milk (leaving 1 tablespoon milk)

  4. 4. Mix the contents well to form a smooth batter. (Remember no lumps should be formed)

  5. 5. Keep this thin batter aside for about 20 minutes. (If uniform consistency is not formed, add water as needed)

Cooking

For Filling

  1. 1. In a non-stick pan, crumble the khoa and roast the khoa till the colour changes slightly.

  2. 2. Add the grated coconut to the mixture.

  3. 3. Mix the contents well and add the remaining sugar, cardamom powder and chopped cashew nuts to it.

  4. 4. If your filling is dry add the remaining milk. (If filling is not dry no need to add the milk)

  5. 5. Transfer the mixture in a deep bowl and keep it aside.

For Patishapta

  1. 1. Heat some oil in a pan and pour a batter (1 tablespoon) to it. Spread it on the pan using a spoon.

  2. 2. Cook the contents on low flame till you get golden brown colour on one side.

  3. 3. Flip to the other side and cook in the same way.

  4. 4. Transfer the pancake on a serving plate and put the filling lengthwise at the center of the pancake.

  5. 5. Fold the batter in the form of a roll.

  6. 6. Cook all the rolls in the same way.

  7. 7. Your dish is prepared and ready to be served.
