Ingredients

Cardamom ½ piece
Carrot ¼ medium
Cashew nuts 6 pieces
Cumin seeds / jeera ¼ teaspoon
Curry leaves / kari patta 1 piece
Garlic Cloves 1 piece
Ghee 1 tablespoon
Ginger ¼ small
Green chillies ¼ piece
Green peas 1 tablespoon
Onions ¼ small
Rice ½ cup
Salt ¼-½ teaspoon as per taste
Spinach Leaves 25 gram
Tomatoes ¼ medium

Recipe

Preparation

  1. 1. Grate the carrot and keep it aside.

  2. 2. Chop the onion. Divide it into three equal parts and keep it aside.

  3. 3. Chop the green chillies length wise and keep it aside.

  4. 4. Chop the tomatoes and cashew nuts. Keep them aside.

  5. 5. In a pressure cooker, add the rice and water. (A little more than the amount of the rice)

  6. 6. Cook the contents for 3 whistles. Keep the rice aside.

  7. 7. Divide the cooked rice into three equal parts and keep it aside.

Cooking

For Orange Rice

  1. 1. Heat some water in a kadai and add the chopped tomatoes to it. Cook the contents till the tomatoes turn soft.

  2. 2. Transfer the contents in a blender jar and blend the contents till you get a smooth puree. Keep the puree aside.

  3. 3. Heat one-third of the ghee in a pan and add one part of the onions to it.

  4. 4. Add the grated carrot, one-fourth of the cashew nuts, half of the green chillies, one-third of the salt and tomato puree to the mixture. Cook the contents for 4-5 minutes.

  5. 5. Add one part of the rice to this mixture and cook the contents for 2-3 minutes. Keep the mixture aside.

For White Rice

  1. 1. Heat one-third of the ghee in a pan and add cumin seeds to it.

  2. 2. When the seeds start to crackle, add the curry leaves, cardamom and garlic cloves to the mixture. Cook the contents for 2-3 minutes.

  3. 3. Add one part of the onions, cashew nuts, ginger and one-third of the salt to the mixture.

  4. 4. Cook the contents till the onions turn golden brown in colour on all sides.

  5. 5. Add one part of the rice to the mixture and cook the contents for 2-3 minutes. Keep the mixture aside.

For Green Rice

  1. 1. Heat one-third of the ghee in a pan and add one part of the onions to it.

  2. 2. Add one part of the rice, green peas, one-third of the salt and spinach to the mixture and cook the contents for 3-4 minutes. Keep the mixture aside.

Final Preparation

  1. 1. Take a big serving dish and spread the orange rice as the top horizontal layer on the serving plate.

  2. 2. Make a horizontal white layer just below the orange layer on the same serving dish using the white rice.

  3. 3. At last make the green layer by placing the green rice on the serving dish horizontally.

  4. 4. Your dish is prepared and ready to be served.
